Mineasahi Produced in Aichi Prefecture (Kinmemai Rice)

Mineasahi brand rice is cultivated at an altitude of 300 to 500 meters. Although the grains are somewhat small, they are shiny with excellent flavor and stickiness. The more the rice is chewed, the more the flavor emerges. Because it is cultivated in hilly and mountainous areas, there is a limited supply, making it extremely rare. This high-end brand of rice is produced in Aichi Prefecture.

Ryotei Takuan (Pickled Daikon Radish)

Fresh daikon harvested at their peak are hung and dried in winter wind for about two weeks. Then they are carefully pickled one by one, using a relatively small amount of salt, at a low temperature. Only the best part of each daikon is used, removing the upper and lower edges. The radishes are seasoned with a mixture of kombu kelp stock and dried bonito stock, which add to the unique, natural umami created during the sun drying process. Each daikon is wrapped in high-grade kombu and manually tied with a gourd strip before it is packed, adding a touch of refinement. Select kombu from Hokkaido is used for these takuan pickles, which were developed to allow passengers to enjoy authentic dried Japanese radish.
