"Hiyoko no Tamago" - Egg-Shaped Sponge
Uses amanatsu-mikan (Chinese citron) produced in Nokonoshima in the Fukuoka prefecture. Wrapped with cream cheese which perfectly compliments the citruses, baked together with a smooth and soft galette dough, and finished with a coat of chocolate fondant in the image of an eggshell. Prepared as a fluffy egg-based cake.
