Grilled mackerel with somen noodles is a traditional specialty of Nagahama City in the Kohoku region of the prefecture. The noodles, which have been dried for three years, are boiled, allowed to rest overnight, and then immersed in the broth used to simmer the grilled mackerel. The somen noodles and savory mackerel make for a flavorful combination.
