The main dish is Nodoguro, white fish also called Akamutsu (Rosy sea bass), cooked in soy sauce. Please enjoy it with a cooked mixture of radish, burdock, Japanese mustard spinach, arrowhead, kurumahu (dried gluten). The rice was cooked into crab rice, using Hotarumai, specially-cultivated rice of Komatsu-shi.

Notoushi, high flesh-quality beef cultivated by farmers with great effort in the clear air and beautiful nature surrounded by the sea and mountains in Noto, was cooked into pinchos by roasting and sealing in the flavor.
