Born in 1969 in Shizuoka Prefecture, Toru's philosophy is to express the natural flavor of ingredients to make the most of the rich blessings of the season, creating cuisine that makes diners feel comfortable in body and mind. He opened Ginza Kojyu in 2003, then Ginza Okuda in 2011. At the age of 37, he obtained a three-star Michelin rating. He's an energetic chef with Japanese restaurants in Ginza, Paris and New York.

About 400 years ago, A long-established store that is said to have started as a refreshment stop "Nanzenji Mongai Matsubayashi Teahouse" in Nanzenji temple in Kyoto. Olivier Poussier was selected as the Best Sommelier in the World in 2000. He has served as sommelier at the prominent "La Tour d'Argent" and "Pavillon Ledoyen" restaurants in Paris. Poussier is now running a wine consulting firm.

Since February 2014, he has served as the General Manager of the Technical Research Department and a Director at the Japan Sommelier Association, and is actively engaged in wine awareness activities and education for next generation. In 2017, he received the "Contemporary Master Craftsman (Gendai no Meiko)" Prize from the Minister of Health, Labor and Welfare. In 2022, he received the Medal with Yellow Ribbon, which is awarded to individuals who devote themselves to agricultural, commercial, industrial, or similar activities and serve as a role model to others with their skills and achievements. He was the youngest person to receive the "Contemporary Master Craftsman (Gendai no Meiko)" Prize in 2017, and the youngest person to receive the Medal with Yellow Ribbon in 2022. A leading sommelier in the world of Japanese wine who actively competes in numerous competitions in Japan and overseas.

Shingo Yamada, Head Chef of ANA Western Cuisine
He has experience at famous hotels in a variety of restaurant settings such as banquet halls and main dining.
As the person in charge of ANA's kitchens, he creates high quality in-flight meals while also teaching cooking to caterers overseas. Currently, he is making use of his abundant experience as a head Western chef, by developing a wide range of in-flight meals that are not bound by convention.
Noriaki Aida, Pastry Chef of ANA
After serving as pastry chef at Ginza Wako's Gourmet & Cake Shop, he became ANA's pastry chef. As a lecturer on confectionery, he teaches and nurtures pastry chefs throughout the country, and creates many dessert lovers.

The appetizer features round slices of roe-filled sweetfish seared until tender enough to even eat the bones. The side dish for September and October is lightly boiled conger pike in a thick grated daikon radish sauce. The main is a traditional Japanese kudzu flour-coated Wagyu beef sirloin stew with a side of fragrant shiitake, maitake, and abalone mushrooms sautéed in Échiré butter. November's side dish is steamed sticky rice mixed with Japanese yam bulbils and chopped burdock root, topped with a grilled fillet of unagi eel dipped in a sweet and savory soy-based sauce. Miso-marinated pomfret is served with sautéed mushrooms, both roasted between fragrant sheets of cedar. Accompanying is candied chestnuts with a bitter inner skin, briefly deep fried to retain the whiteness of the batter, and sweet pickled bright purple radish.

The appetizer starts with duck hiding paprika and orange chutney inside. Lightly smoked kisslip cuttlefish is served with a yuzu miso-flavored tartar sauce. Enjoy with lotus root and taro pickled in a red perilla sauce. The main is a succulent grilled Wagyu beef fillet. Accompanying is an array of fall flavors featuring a specially made Madeira sauce with cubes of chicken liver pate and chestnut pancakes. Grilled flounder is topped with a shrimp and scallop mousse and carefully selected shiitake mushrooms layered like scales. A Kujo green onion risotto is made with authentic Italian Carnaroli rice.

A fall menu in collaboration with Ginza Okuda. The appetizer features crab meat, seared scallops, accompanied with splendid alfonsino fish cured between sheets of kelp, and squid, all dressed in a citrus jelly. The first side dish is grilled conger pike over boiled chrysanthemum petals soaked in a yuzu dressing. The second is a dish of chicken, seasoned with salted rice malt wrapped around burdock and green beans and drizzled with creamy sesame vinegar. The main fish is a fatty seasonal barracuda wrapped around king trumpet mushrooms, providing differing textures of two classically fall ingredients that both compete for your attention. Finally, square cuts of beef simmered in a sweet soy sauce richly flavored with natural Japanese brown sugar are served with a half-boiled egg and maitake mushrooms.

This menu was crafted in collaboration with chef and owner of Shinmonzen Yonemura, Masayasu Yonemura. The appetizer is served with your choice of red paprika or gazpacho sauce. Octopus tenderized in hojicha roasted tea is topped with daikon radish and anchovies. The main is a Wagyu beef shank braised with red wine and vegetables and served with sliced burdock fritters. A flounder meunière is served with specially made tartar sauce with chopped scallops and avocado. It is accompanied by a mini savory okonomiyaki Japanese pancake inside a shiitake mushroom cap.

Wines that passed an initial screening then went on to be marked at blind tastings in the final selection, and the entire selection process took around half a year. Wines that scored highly at the blind tastings by members of "THE CONNOISSEURS" such as ultimate wine masters Olivier Poussier (Best Sommelier in the World 2000) and Satoru Mori are served on board. This lineup strikes an exquisite balance between the bold individuality of each wine, and features brands from a variety of wine-producing several regions including Japan in addition to European classics.
In both 2018 and 2019, our in-flight wine selection received many awards from the "Cellars in the Skies" and "Wines on the Wing" competitions.
Our lineup includes not only allergen-free meals but also dietary meals, religious meals, meals for infants and small children, and more besides. Please do not hesitate to request the meal you require for a safe and comfortable flight.
