  • Joachim Splichal

Joachim Splichal, PATINA
Widely known as the top chef of a famous restaurant in southern France, Mr. Splichal moved to the USA in 1981. Since opening his specialty restaurant, PATINA, in 1989, he has spearheaded the restaurant group’s activities as executive chef, with a focus on the West Coast of the USA. He was recognized in 2002 as a legendary chef by Bon Appetit magazine, and selected as Restaurant Owner of the Year. Mr. Splichal is now a leading figure in the American culinary world, and is regarded as the king of California cuisine.

  • Takeshi Kikuchi

Takeshi Kikuchi, Ukai Co., Ltd., head chef of Tokyo Shiba Tofuya Ukai and supervising chef of the Japanese cuisine business division
After apprenticeships at Japanese restaurants in Japan, Mr. Kikuchi became the head chef at Tofuya Ukai Owada in 2002, and in 2016 took the positions of head chef at Tokyo Shiba Tofuya Ukai and supervising chef in the Japanese cuisine business division. Showcasing skills as a chef every day, he is also actively involved in business outside of Japan to spread the excellence of Japanese cuisine around the world.
