Shirataki Carp Cuisine

"Tastes of JAPAN by ANA" is a regional vitalization project that collaborates with the different prefectures in Japan to present the Land of the Rising Sun in all of its diverse glory.

The clear stream of Ogi nurtures its specialty cuisine

The carps in Ogi’s local specialty dish are exposed to the clear stream of the Kiyomizu River, which was selected as one of Japan’s 100 Remarkable Waters, for about a month without feeding. Doing so removes its distinctive smell and the flesh becomes firm with tasty fat in the winter.

Savor the famous carp of Kiyomizu

The pristine water flowing through the Kiyomizu area throughout the year is excellent in both quality and quantity, and carps exposed to this clear water for about a month are reborn as the “Carp of Kiyomizu.” The carp dishes of Ogi are rich in collagen and do not have the distinctive smell of river fish. The carp arai (sashimi chilled in freshwater) has a refreshing taste, and each shop serves them with its original miso sauce. The Koikoku (miso soup) gets its wholesome taste by simmering chunks of fish, including the bones. There are eight carp cuisine restaurants around the Kiyomizu area.

Kiyomizu Waterfall

The Kiyomizu Waterfall located upstream of the Kiyomizu area is the source of the Kiyomizu River, selected as one of Japan’s 100 Remarkable Waters. The view of the 13-meter-wide cascade of clear water dropping 75 meters is quite dynamic yet beautiful. The area around the waterfall basin is cool even in the summer and is filled with the sound of children happily playing.
