We’re highlighting the ingredients and aromas of spring to create deliciously beautiful and well-balanced meals. The star of the appetizer is the Kosode sushi, featuring seasonal masu salmon. The small simmered pork bowl combines kakuni (braised pork) with the sour flavor of ume plums for a wonderfully fresh dish and is garnished with crunchy minced ume plum, providing the perfect touch of color. The main dish is steamed sweet snapper and grilled yomogi tofu with a hint of the fragrances of spring. The elegant and light taste of the sweet snapper is complimented beautifully with a crab paste full of umami flavor.

This menu was created in collaboration with Chef Masayasu Yonemura, whose restaurant, Yonemura, is published in the “Michelin Guide Kyoto-Osaka 2020.” This appetizer is an assortment of unique gems, including clam meat with kiwi miso and matcha-scented sandwiches. The main dish combines a beef fillet steak with savory sautéed leek and a wasabi-flavored light, cold sauce.

Tofu hamburger rolled in a shiitake mushroom with roasted tomatoes
This vegetable dish was created in collaboration with Chef Masayasu Yonemura, whose restaurant, Yonemura, is published in the “Michelin Guide Kyoto-Osaka 2020.” The soybean meat containing kombu kelp stock is stuffed inside a jumbo shiitake mushroom in the style of a hamburger and topped with Japanese starchy sauce. The texture and taste are just so that it could easily be mistaken for true meat dish.

Rich-Tasting Miso Ramen “Daichi”
No meat is used in to produce these noodles. Instead, soybeans are used to create a topping with the texture and flavor of meat, making the ramen even healthier. The noodles used in the dish are also unique, as they are cut into flat strips. Savor the depth and richness of the nostalgic miso flavor.

Champagne Duval-Leroy Brut Réserve
A family owned Champagne house since 1859, Duval Leroy is well implanted in the heart of the region, especially in Côte des Blancs. The Brut Reserve is a vinous Champagne, with dry fruit, sweet apple and pastry flavors. On the palate, the attack is broad, then the bubbles are very fine and the mousse is creamy and fresh. The persistent and salty finish is lifted with notes of sweet spices, biscuit and white bread. Grapes: Pinot Noir, Meunier, Chardonnay.

Chateau Souverain Merlot 2017
Château Souverain is an old estate in the Alexander Valley in California. The winemaker Ed Killian has been making wine in the region for 25 years and knows exactly where to source the best grapes for the signature cuvées. This is a very harmonious Californian Merlot, expressive, with an intense bouquet combining minty, smoky and red plum notes. The palate is velvety, with fine grained tannins, moderate acidity, eucalyptus, black olive, savory and ripe strawberry tones. Grape: Merlot.

Domaine Verget Mâcon-Villages Grand Élevage 2018
Vinified at a domaine founded by Jean-Marie Guffens in the belief that “the best wine is made using the best grapes.” Influential wine critics around the world laud Verget as a paradigm of a great white wine. Lemonade aromas intermingle with honey notes and a flowery hawthorn fragrance. Vibrant acidity complements delicate sweetness. Grape: Chardonnay.

Shichida Junmai Daiginjo
TENZAN Sake Brewery, Saga
The finest sake under the “Shichida” label, produced at Tenzan Sake Brewery by the Ariake Sea of Kyushu. Brewed with highly polished (45%) Yamada Nishiki rice and spring water from a Mt. Tenzan stream where fireflies dance in summer. A mellow, subtle brew with fruity ginjo aromas balanced by a flamboyant rice umami. 16% ABV.

MASUDA SAKE COMPANY LTD., Toyama
From a Toyama brewery founded in a flourishing port town in 1893. “Masuizumi” is an auspicious portmanteau of “Masuda,” the brewer’s surname, and “izumi,” the word for fountain. A pure-rice sake with ever-developing richness. Full rice umami infuses melon and banana aromas. 15% ABV.

Noguchi Naohiko Sake Institute “Yamahai Miyama Nishiki”
Noguchi Naohiko Sake Institute Inc., Ishikawa
Japan’s “god of brewing,” Naohiko Noguchi has launched a brewery to capstone his seven-decade dedication to the art of great sake. This crisp yamahai sake has calm berry aromas and a soft palate. A delightful balance of acidity and umami, with herbal breeziness throughout. 19% ABV.

Onuma Brewery, Miyagi
Onuma Brewery was established in 1712 at a rural village in the Miyagi prefecture located at the foot of the Zao Mountains. Inheriting 300-years of tradition and authenticity, this Junmai sake is made with local rice “Sasanishiki” which has gentle nose with clear umami and refreshing flavors. 15% ABV.

This drink is made without added flavors or salt from a mix of 32 fruits and vegetables.

Our very special brew is made with coffee beans from sustainable Rainforest Alliance Certified* farms in Brazil. Green seeds are removed after the pulp of the coffee cherry dries. The natural processing of beans produces a gentle fruity sweetness in the coffee. The bean cores roast softly in tender waves of heat, developing a fragrance of roasted nuts and a semi-sweet lingering finish reminiscent of caramel.

Our new comforter features Maruhachi Mawata feather down. The new pillow boasts two layers—one filled with feather down for an airy, fluffy quality, and the other made from soft, springy polyurethane foam—for a completely unique feel. Our bed pad is a version of Nishikawa Sangyo's Air Cyclone®, which has been customized to fit our Business Class staggered seats perfectly. It boasts three special layers and the optimal degree of resilience, allowing you to turn over in your sleep easily. With excellent breathability, it also enables you to enjoy an incredibly comfortable slumber. The reverse side of the mattress is slip-resistant, meaning you can also use it as a seat cushion while sitting upright in your seat.
We use Nishikawa's Air Cyclone® bed pad, which won a Japanese Good Design Award in 2012. Air comprises 96% of the bed pad, providing excellent breathability and quick-dry features. The air cushion ensures fantastic support in any positions, allowing you to feel as comfortable as if you were resting on a cloud.
New bed pads will be introduced on flights equipped with ANA BUSINESS STAGGERED seats only.
Our down comforter offers a supreme level of comfort and hygiene, with all feathers having been carefully washed and dried at a high temperature at a Maruhachi Group factory within Japan. Down comforters boast excellent moisture absorption and desorption, allowing you to enjoy an even more comfortable rest.
The pillow comprises two layers: one filled with the high-quality feather down, and the other made from polyurethane foam. The feather down side is airy and fluffy, while the polyurethane foam side is soft and springy, giving this pillow a completely unique feel. Use these different sides to suit your needs. The pillow case boasts 100% pure Egyptian cotton and is soft to the touch, ensuring a good night's slumber.
