ANA Chefs - Japanese Cuisine
The appetizer for March is a clam cradled in its shell and scented with a hint of cherry blossoms. Enjoy the pillowy-like clam along with field mustard greens and glehnia root. In April, enjoy the pleasing texture of razor clam, bamboo shoots and udo (mountain asparagus) arranged in a checker design and finished off with a leaf bud miso. May will feature ark shell clams with hanawasabi pickled in soy sauce and served with sea urchin and Japanese yam. The main dish for March is tilefish with urui (mountain vegetables), bamboo shoots, and field mustard greens wrapped in yuba (bean curd skin). As you sink your chopsticks into this dish, you will sense a whiff of spring air. The Japanese beef sukiyaki for April and May will present you with a sense of spring. Seasonal Japanese parsley and udo are braised in a rich warishita (sukiyaki base made of soy sauce, sweet sake and sugar).

ANA Chefs - International Cuisine
Let your eyes be drawn to the nicoise-style salad presented in a floral pattern. Hot-smoked salmon, angel prawns, tsubugai, and simmered saffron potatoes are carefully arranged inside a crown of tomato slices. The main dish of grilled wagyu is prepared in a playful Japanese style. The fillet is topped with a whole-grain mustard and a puree of roasted and minced Kujo negi (leeks). The side dish includes kogomi (fiddleheads) and dried bamboo shoots in an arrangement reminiscent of spring. Red bream poêlé is served on a bed of zucchini puree with tiny scallops together with a lemon and lemon zest cream sauce.

Rich-Tasting Miso Ramen "Daichi"
No meat is used in to produce these noodles. Instead, soybeans are used to create a topping with the texture and flavor of meat, making the ramen even healthier. The noodles used in the dish are also unique, as they are cut into flat strips. Savor the depth and richness of the nostalgic miso flavor.

The flagship red Bordeaux blend from Kenzo Estate in Napa valley. This wine is elegant, reserved and enchanting, with aromatics framed by ripe raspberry and rose petal. On the palate, pronounced layers of berrylike fruits mingle with black pepper, with an underlying foundation of mineral. This is excellent wine with good depth and delicate smoothness. A wonderful paring with meat dishes such as duck and beef.

This ripe white expresses the noble terroir of Koshu, Japan. Undertones of white flowers blend with fruity aromas of muscat and white peach. The nuance of spicy cloves deepens the bouquets. Brilliant juiciness and crisp acidity burst on the palate with an appealingly bitter finish. A wonderful paring with seafood dishes.

Kokuryu Sake Brewing Corporation (Fukui)
Since its founding by Nizaemon Ishidaya in 1804, Kokuryu has been providing sake aficionados with premium-caliber, handcrafted brews that pair delightfully with seafood dishes. The breakthrough daiginjo "Ryu" (dragon) is produced by a lowtemperature fermentation adapted from French techniques for maturing wine. A soft, velvety palate saturated with luscious apple and tropical fruit aromas.

BANJO JOZO (Aichi)
"Kuheiji," the forename of the founder, has been passed down through 15 generations of brewer owners at Banjo Jozo, since 1646. A subtle, well-made sake brewed with rice polished up to 35%. Intense aromas of melon and litchee flood the palate with sweetness and satisfying bitterness. The acid-forward finish is clean and elegant.

Elegant aromas with a gentle, mellow texture and long, layered finish.
This robust sake is brewed by the traditional Kimoto method using the super-flat rice polishing technique from Daishichi (founded in 1752) to purify the rice flavor to its essence. An underlying richness amplifies the clean taste.
